The sunshine is gone.
It was inevitable. At least we got out and enjoyed it while it lasted!
Camryn was still sleeping when I took these. Summer was eating Cheerios and watching Hansel and Gretel.
Took this out the window.
Joe is at work, the girls are playing and watching a movie, and I’m drinking coffee and getting some design work done. I may or may not be laying in bed doing these things because I may or may not have rain-induced lazy-ness.
Today is Tasty Tuesday over at For the Love of Blogs. I recently discovered FTLOB and am so glad that I did…. it’s a wonderful community and I love all of the new people I’ve met over the last few days. You all have left the sweetest comments! If you aren’t a “member” over there, go check it out.
I don’t have an official recipe to share but I can tell you what we had for dinner last night…
Sauteed chicken… I trimmed them, pounded them (I recently discovered how fun it is to pound chicken, and also how useful it is to get it to cook evenly. Try it!), seasoned with salt, pepper, and dry Thyme, and then cooked them in olive oil on medium heat in the skillet. I think it took about 10 minutes on each side.
Then I made this pasta sauce. I just mixed together a jar of pesto and a jar of roasted red peppers that I chopped up, then heated it up in a pot and served it over penne pasta.
I also cooked some mixed vegetables, since I don’t feel like a meal is complete without a vegetable of some kind.
I don’t have a picture of it all finished, but trust me, it was delicious, quick, and super easy!
