Dinner and a Give-Away

I hate when I wait this long in between entries. Now I have no idea what I haven't said or how to go about discussing what has happened since I last spoke with y'all.

Not too much has been going on around here. A lot of waiting, as far as the home-buying process goes. We found out last night that there is a problem with some of our paperwork. To be honest I don't understand exactly what is going on, all I know is that my blood pressure is way up there and if we don't hear some good news soon, I may have a heart attack.

Last night, we had spaghetti squash for the first time. It was pretty good! I had no idea there was such a thing until recently. It was so easy, too! We also had creamed spinach, I had to make that too because the spinach was about to go bad.



Summer's new favorite thing to do is play with bowls and cups in the sink. She loves playing in water so it's a lot of fun for her and it keeps her occupied for a long time. She also learns a bit of science while playing, such as what will float, what happens when you fill the containers with water, etc.



It's lunchtime around here, so I'd better go. I think I hear someone trying to break into the pantry.

A few have asked...

...for the Brussel Sprouts with Bacon recipe. I'd love to share it, it was by far the best way I've ever cooked them.

Ingredients:

1 bag/package of fresh brussel sprouts
3-6 slices of bacon, depending on size
coarse salt
black pepper
3 tbsp olive oil
1/2 cup butter (I use SmartBalance, but you can use whatever kind you want)

Instructions:

1. Cut rough ends off of brussel sprouts,, and peel the gross outer leaves off.

2. Chop the brussel sprouts in half, length-wise. Place in freezer bag or bowl.

3. Add olive oil, salt, and pepper to brussel sprouts. Toss in bag or bowl to cover.

4. Cook your bacon. I used the instant microwave bacon because it's easier. If you have uncooked bacon, cook in skillet until crispy, remove, and chop into small pieces. You can leave the grease in the skillet that you will use to cook the brussel sprouts for extra flavor.

5. Melt butter in skillet on med. heat. Add brussel sprouts once butter is melted.

6. Cook brussel sprouts until they are turning brown. When they start to turn brown, add the chopped bacon, and stir it all together. Watch them carefully as they cook and adjust your heat if you need to. I always end up burning some, but even the burnt ones taste good usually.

7. Once browned, preferrably on all sides, remove from heat and enjoy!


The recipe that I got this idea from said to add chopped onion to the brussel sprouts when you first put them in the skillet. I was out of onions so I didn't, but feel free to try that, and let me know if it's good!
